15-MIN HIGH PROTEIN LUNCH IDEA Ingredients: • 1 large wrap • 1 tbsp Mingle Peri Peri seasoning • 1 chicken thigh (approx. 120g) • ½ an avocado (mashed) • 2 slices of tomato • 1 tbsp Greek yoghurt • 2 Romaine lettuce leaves Method: 1. Coat the chicken thigh in the Mingle Peri Peri seasoning and cook in the air fryer at 200°C for 10 minutes. Let rest for 2 minutes, then slice. 2. Cut the wrap from one side into the middle (as per the video) and assemble each quadrant with: • (1) avocado • (2) yoghurt and lettuce • (3) sliced Peri Peri chicken • (4) tomato slices 3. Fold the wrap, then crisp in a pan on high heat for 30 seconds on each side. 4. Cut down the middle and enjoy!
