My 9yo daughter absolutely loves this dish. 😋Ampalaya gets a lot of negativity by children (and adults) for its bitter taste. So how do I get Skye to like it? Very simple. I just slice it thinly! 😁For this dish, I just sauteed garlic, onions and lots of tomatoes, egg, fried tofu and cooked it for about 10mins. Added some water (or vegan broth), patis or salt, little bit sugar, pepper and ampalaya. Since the ampalaya is thinly sliced, it will take only 5mins or less to cook. Try it and you'll notice it's not that bitter at all. 🥰Others prep the ampalaya by putting a generous amount of salt to release its bitter juices and then they rinse it before cooking. But I like to keep the nutrients intact. 👌 So far this has worked for Skye and I hope it does for your kid too. ❤️ | Michelle Zamora
